Recipes made by our New Keto Chef Mom- Mrs. Mehta

Our patient MM’s mother – Mrs. Mehta is our new keto chef mom. She has enthusiastically created variety of recipes from simple ingredients given by us. Our dietitian had given her recipes with the amount as per MM’s caloric and ratio requirement and Mrs. Mehta converted one simple recipe into two delicious and attractive recipes which her son enjoys a lot. This is a perfect example of being more creative: One recipe planned could be converted to at least 2-3 different recipes. This would avoid monotony of the diet.

Ingredients given to her are as follows: –

MAIDA (REFINED FLOUR)
KETO WONDER POWDER (SOYA POWDER)                                                                            AMUL CHEESE
VEG A OR VEG B
OIL/GHEE OR BUTTER

From the above given ingredients, she prepared 2 recipes- Manchurian with tomato sauce and Cheese Frankie with cheese chocolate ball.

1.MANCHURIAN WITH TOMATO SAUCE.

INGREDIENTS:
MAIDA (REFINED FLOUR)
KETO WONDER POWDER (SOYA POWDER)                                                                                  AMUL CHEESE
TOMATO, CAPSICUM, FRENCH BEANS                                                                                          OIL
USE CORRIANDER POWDER, GREEN CHILLI, CUMIN POWDER, TURMERIC POWDER GINGER GARLIC PASTE.
SALT TO TASTE.

METHOD OF PREPARATION: – 

STEP 1:Weigh all the ingredient as per the amount given by dietician.

STEP 2: Take a pan , add oil and heat it. Add finely chopped capsicum and french beans into the pan and sauté it.

STEP 3: Cool the vegetables then add grated cheese, keto wonder powder, ginger – garlic paste, green chilli paste, coriander powder, cumin powder, turmeric powder, salt in a mixture. Roll it in little refined flour and make small balls out of it and deep fry it till golden brown, remove it in a bowl.

STEP 4: (for tomato gravy)-After the deep-frying process, the oil which is remaining in the pan use it for gravy preparation. 

Make tomato puree, sauté it in remaining oil, add salt and pepper. Pour it on the Manchurian balls in the bowl. serve hot.

2.CHEESE FRANKIE WITH CHEESE CHOCOLATE BALL

INGREDIENTS:
MAIDA (REFINED FLOUR)
KETO WONDER POWDER (SOYA POWDER)                                                                                AMUL CHEESE
TOMATO ,CAPSICUM AND ONION                                                                                                  BUTTER                                                                                                                                  CORIANDER AND MINT LEAVES
USE GARAM MASALA, CUMIN POWDER, TURMERIC POWDER GINGER GARLIC PASTE.
SALT TO TASTE.

METHOD OF PREPARATION: – 

STEP 1: Weigh all the ingredient as per the amount given by dietitian.

STEP 2: Mix maida (refined flour) and keto wonder powder , prepare a dough out of it. Roll it into the roti/ flat bread.

STEP 3: Heat the pan, add oil and shallow fry the roti in it.

STEP 4: Sauté the vegetables(tomato, capsicum and onion) in the same pan , add ginger garlic paste , finely chopped coriander and mint leaves, garam masala, cumin powder, turmeric powder, salt to it.

STEP 5: Cool the mixture and then add half grated cheese and roll it and stuff it in the roti. Frankie is ready to serve.

STEP 6: (To prepare a cheese chocolate ball)-Use remaining cheese, grate it, add sugar free and chocolate essence. Make it into small ball and refrigerate it. Serve it with Cheese Frankie.
